I think having a regular knight wouldn't be too much. You should make your knight! It would definitely make the group dynamic more interesting

I have tons. But when deciding how to go about a character, what is it you are unsure about? The race, the class?

Mostly the class. I've never played D&D, I'm not really familiar with them.

You don't need to orient yourself on DnD classes, but maybe you could take a priest or druid?
