since Cerberus Vale hunts demons, is it safe to assume that the demons who join, aren’t allowed to eat humans anymore? XD If so, what do they do instead?

Joseph finds that it could be possible to feed off other demons. But even he does not know the results of that, considering he doesn't absorb the life force of others. At best, Joseph has probably created an infinite artifical life force for Sayogoromo to feed off of (Considering I'm aware Sayogoromo feeds off of life force as a power). Soma and Joseph have been accustomed to human food though, which is why you see Soma chomping on the trail mix.
If so, what do they do instead?

Artificial it is then lol. Although, Sayogoromo wouldn’t be opposed to trying demon life force. The idea of artificial food reminded me of, Fullmetal Alchemist and the homunculi XD.

How secluded is the estate? Is it within walking distance to the nearest town, or would they have to take transportation when they eventually leave?

Transportation, unless a member has some sort of teleportation. Its intended to be secluded so that the populace don't care what they do. (The estate is owned by outsiders, thus they like it that they're far enough away to not meddle in the daily lives of the people)

Certainly, Broseph Vale has acquired a lot of money throughout the years. Three carriages, 6 horses, and 1 car for special meetings with the 5 families.
