Because it isn't an advantage. If you used your OOC knowledge IC that's metagaming and against the rules. So there's literally no downside in revealing whether you know or not. So the only reason you wouldn't reveal it is because you have nothing to reveal. Either that or you actually do intend to metagame, which is an entirely different issue beyond servant guessing.

This was the next thing I was going to say. The luck stat has nothing to do with Ruler knowing the identities of every servant they encounter.

The problem is your clues don't add up. You said he was the enemy of Selim I, however the only king of Hungary who reigned at the same time as Selim I was Validslaus II.
