History: Angels and Demons are essentially the same creatures. Huge practically immortal beings that are hell-bent on destroying each other. Both creatures are created as fully realized Angels. Demons are just Angels that have disobeyed The Lord, Angel of Authority, and have been cast out of heaven and into because of it. Both are terrifying physically and nearly impossible to destroy. Not only because of their tremendous non-earthly power, but because all Angels, fallen or not, are created and destroyed in pairs.
Angels can't enter hell and Demons can't return to heaven. So where do they meet? Earth. Earth, the land of mortals, who can't possibly be anything but canon fodder for "the divine plan"? Humans though have quite the advantage: they walk in heaven, hell, and on Earth. That's when the divine discovered that the key to fighting each other on their home turf...mortals. Originally a demonic construct, a 'contract' between moral and divine allows a divine to travel wherever their mortal partner is when summoned. Even in heaven or hell.
Mortals with Angel contracts are called Priests and Priestesses. Mortals with Demon contracts are called Sorcerers and Sorceresses. They gain power based on their Demon/Angel partner, and often are key to attacking either heaven or hell. This is the way it was for centuries. Earth being nothing but a playground for Angels and Demons to destroy whenever they decided.
Until the mortals starting fighting back the only way they knew how to. By using the very contracts the divine had created. Humans studied the contracts and got surprising good at magic. They realized that they were contracts that only mortals can break, and that they would bind a divine being to a mortal's soul and wishes for their human life. They realized that there were ways of 'tricking' a divine being into a contract...because while Angels and Demons can stretch the truth and deceive to their hearts content, they can't break a deal.
This is how The Society for the Protection of Earth (TSPE or as it's colloquially known as "The Society") was formed. A society of sorcerers and priests that sought to end the Holy War by any means necessary and protect Earth from divine destruction.
Below are some important information on the individual races you can play:
Angel- First, Angel's are created not born. They were created by another Angel with another Angel. Basically, an if an Angel wants to create an Angel, they have to make two. (Remember they are created and die in pairs) Angels are also created fully realized with all the abilities and powers they'll ever have. There are no adolescent Angels. They follow this hierarchy very well; you listen to the Angels above you in the hierarchy. Angels who don't follow the hierarchy are kicked out of heaven permanently and considered Demons. The hierarchy isn't necessarily indicative of power, there are several Seraphim that could be considered more powerful than The Lord, but they obey The Lord as the Angel of Authority. Speaking of, if you want to be an Angel, you must choose something to be an Angel of. (Trust, hope, peace...) Also, once an Angel has been created, there can be no other Angel of the same concept. Even if the Angel of Peace falls, there will never be another Angel of Peace. So when picking a concept, look at the Demons too. They have two forms. Their Earthly form and their Heavenly form. The Earthly form is of their choosing, and is typically human looking, maybe with some extra features. This is where the typical "winged angel" stereotype comes from. The Earthly form can be changed at any time. The Heavenly form (sometimes known as their divine form) is the form they were created in and never changes, even when they fall. This form can only exist in Heaven/Hell, and they are arguably their most powerful, but this form is usually monstrous. With fire and extra heads and usually not humanoid. Remember, these are warriors of the Lord. They aren't made to be good looking.
Demons: Demons are fallen Angels. They probably fell for disobeying the hierarchy, because that's what most Demons fall for. Demons, thus, don't really have a strict hierarchy. There are seven Sins that are fallen Seraphim and are more powerful than "normal" demons, but other than that, Demons often are respected based on their power. When Angels fall, they lose their concept, and get another one. (This is often traumatic because when they lose their concept, they lose it permanently. A fallen principality of music can never hear music again unless directed by a contracted mortal.) They get a new concept, for the seven sins, it's obvious: greed, pride, wrath etc. For normal demons, they often pick a new concept that is considerably weaker than their first, but isn't necessarily bad. For instance, a fallen Seraph (singular of Seraphim) of Time could become a Demon of Finding Things. They can make deals with mortals to grant wishes in return for whatever they want. This usually ends badly for the mortals. They can change their Earthly form and keep their divine form. (Though it's no longer considered 'heavenly')

Most limits on their abilities are placed by themselves through their hierarchy (for Angels) or through their contracts (for both, but effects Demons the most. Also fallen Angels lose a great deal of power when they fall). Also, mortals can only contract with one divine being! Also, angels aren't created with a gender. They can choose a gender they prefer the most, or switch it up every few centuries, but they are divine beings! Not mortals! FYI, the Lord is always referred to as an 'it', not he/she.

They also possess a "Holy Body" and can't be possessed by demons. Angels can sometimes opt out of following their demands through higher Angels on the hierarchy. But Seraphim and other Angels high in the Hierarchy don't have time to go undoing a bunch of mortal demands when they're usually in century long battles with Sins. Priests can summon their contract by praying. Angels usually have a longer response time than Demons. They're doing important work and all that.
Sorcerer/Sorceress: A mortal in a contract with a Demon. They also gain abilities based on their Demon's concept (They're current concept, NOT the concept they had when they were Angels) They have pretty tight control of their Demon, but Demons don't follow commands "to the spirit" like Angels try to do, so just blindly ordering Demons around usually ends very badly. Demons follow Sins based on fear, not because of order/hierarchy, so Sins can't break a contract's order. Sorcerers can summon other Demons (priests can't summon other Angels) and can cast dark spells. (Usually ritualistically that require some sort of sacrifice) Sorcerers can summon a contracted Demon by saying their name, or a name they've been known by.

5) Along with four- use your powers wisely. Don't go using your divine powers to ruin everyone's fun (unless it's an agreed upon part of the roleplay) or The Lord will have words.
6) Don't be afraid to be lesser Angels. Power isn't what this roleplay is about. In fact, it's about mortals overcoming divine beings (or trying to anyway). Remember: Being well known in hell is never a good thing.
7) Have fun! Make up your own legends (as long as they fit within the framework I've provided).
8) There will be separate conversations for Angels, Demons, and Mortals. Because everything is not always what it seems.
