I've only known mimics to be treasure chests, but I'd say it could be a possessed mannequin that's developed a symbiotic bond with a mimic suit of armor? Double threat. Triple threat if the Mannequin can use weapons due to the possession.

Unfortunately, 5e basically deleted intelligent mimics, but they can be anything they have the mass to imitate. Floor, chest, door, strap on, keychain, bookshelf, the carpet, armor. I was thinking the mimic was motivated by food, as they usually are, but was smart enough to know that it had a greater chance of getting something to eat if it moved around and looked for food. I guess a possessed mannequin might strike a deal with the mimic in that regard.

Well, it's the traditional mimic that we're thinking of. Mimics have been able to mold themselves into traps for unknowing adventurerers, but I've just personally never come across one that wasn't a chest.
