The transformation process is purely physical, it's likely that merfolk who transform into humans would no longer smell exactly like fish. Their physiology, including their skin, hair, and bodily secretions, might become more human-like, eliminating most of the fishy order, but probably not all until they were thoroughly bathed.
To be fair, this isn't based in modern times with assorted bath and bodyworks stuff. I know everyone might be a smidge funky. xD
