Just a few questions about the lore, hope you don't mind! Is there a reason angels and demons are at war? I get that angels are trying to protect humans, but what are the goals of the 8 demons? And, by association, what are the fallen getting out of it by working for them?

Trying to decide if I should make a twilight human, that is someone who's not light or dark, but a mix of both as a human should be, or an eldritch/eldrazi esque demon

As for what are the goals of the demons, its just sort of the age old instinctual thing. You know the same reason we see vampires and werewolves fighting.
The Fallen work for them for a multitude of reasons, none of which really have to do with the demons. If they resent the angels, or if they get bored being neutral, etc. Anything you can think of really. Oh, and that reminds me to add whether a fallen is neutral or not to the CS!
