Hylian, Gerudo, Zora, Goron, Rito, Kokiri/Korok, Minish/Picori
(If there are more you can think of considering them on the table as well, I don't believe Sheikah or Yiga count as a race tho, pretty sure they are just a clan)
Id say its fair to have 1-3 characters at most depending on how many people join.

Appearance: 5'6" Medium length hair, Redhead, emerald green eyes, Fairly slim build with some muscle showing in arms, mostly hidden under various dresses.

Basic Information: Current Princess of Hyrule, after the recent passing of the former king she is preparing to assume the role of a queen to the kingdom being the sole air to the throne.
Upon the rise of monsters appearing in Hyrule more frequently, she has grown more warry of a looming threat and works tirelessly to find a way to prevent disaster. This constant stress and worry could maker her quick to irritation on a bad day. Needs sleep.

Beastmaster Zaris

Appearance: Zaris has coal-black hair that waves in the wind and is secured in a ponytail by a dark green ring. When Zaris has his cloak hood up, this ponytail gently rests at either side of the base of his neck. Since Zaris often travels around Hyrule, he does not comb his hair that much, causing it to appear quite messy. His eyes are amber-yellow in color and are sometimes seen as quite intimidating. Beneath his eyes are black markings resembling four-sided diamonds. Zaris bears a slim yet athletic figure brought about by his worldwide traveling and its trials and tribulations, and is roughly 6' in height.

Zaris' typical outfit is a dark green coat and trousers, a black hooded cloak depicting brown, angular animal designs, brown leather gloves with buckles at the wrists that have their pointer and middle fingers cut off, and rugged adventurer's boots that are also secured by buckles. Zaris wears a small enchanted ruby amulet around his neck, a gift from the Gorons that helps to stave off intense heat. At his waist is a durable utility belt which has a worn-out currency pouch to keep his Rupees in, a small knife for carving and cutting, his chain-whip, crafted with aerodynamics in mind by a Rito smith and slightly augmented with Sheikah technology, an intricately-carved wooden flute, and a few other small survival tools he keeps for emergency reasons. Zaris also has a pack on his back that he uses as his primary storage for food and a number of larger items that would not fit on his belt, such as his personal journal.

Basic Information: Zaris prefers the company of animals moreso than his fellow Hylians or other humanoid races, but that doesn't mean he can't make new friends. He has a soft spot in his heart for even the largest of wild creatures, and will help them when he is able to. On top of this, Zaris likes to tell stories of his travels, wherein he will read from his journal and describe the landscapes, plants, and animals he's seen, often going into near-poetic levels of detail. Zaris can be sarcastic and is not afraid to speak his mind at times. He hails from Riasa Village, which lies at the border of what is known as The Beastwood, a dense (and spooky) forest to the east which contains a temple to Riasa's guardian deity. Zaris is almost never seen without his animal companion, a Maraudo Wolf named Mirel who he had rescued from being killed and eaten by a band of Bokoblins several years ago. He also has something of a quirky love for meat-related dishes and the moon, sometimes admiring its beauty for hours at a time.

That seems good to me. One thing I did mean to ask is if you had a map of Hyrule prepared already, so that I could work in a bit of worldbuilding while still following your original plan. Now that I see you do have one, I'm very much willing to work with what you have.

Standing at 6’7, this man is much taller than most Hylians in the kingdom of Hyrule, but other appearances such as his face are unknown.
He wears both a large black coat along with a black dyed version of the Blademaster uniform from the Yiga clan, also wearing a completely blank mask with no symbols on it. His hair is still able to be seen, a black ponytail at the back of his head.
Basic Information:
A mysterious man walking around the lands of Hyrule, just like any other Yiga clan member. But instead of trying to cause chaos and assassinate people, this man instead aids travelers who are in trouble combat wise, fighting alongside them in battle or taking down ambushes that the travelers would walk into if they were not paying any attention. He is often spotted in Faron or the Great Swamp. While many other Yiga clan members desire the Might Banana as their favorite food, he instead enjoys eating meat, so much so that he is able to eat monster meat without getting sick, but says that monster meat is often ‘bland’ and ‘tasteless’, but would not give up any chance to eat meat, even if he has to steal from a camp in order to do so. Even with his large size, his Yiga clan training allows him to still be agile in battle, even when using the Windcleaver weapon, and has some skill in using magic, the examples being the common ability every Yiga clan member has which is to disappear in a cloud of smoke and reappear somewhere else and stone manipulation, allowing him to create pillars of stone and also create and throw boulders at his enemies, but both abilities have 4 uses before having to recharge for 30 seconds.

Appearance: Ludo is a relatively average height, average build, Hylian with short-cropped brown hair and massive blue eyes behind thick-framed glasses. He has a young, inexperienced charm to his appearance, which he as a member of the press absolutely understands and tries to use to his advantage. He typically wears clothes that wouldn't stand out in a professional setting, relying on castle town's standards of a button up shirt, trousers, a tweed vest, and good shoes. Ludo isn't really made for wilderness travel, but in a pinch he can put together clothing to suit whatever weather he needs to chase a story into. Regardless of whatever situation he finds himself in, one can always find Ludo with his jade Kokiri-made bracelet and cap.
Basic Information: Ludo is a young man born and raised in the castle town. He is a lover of the people and their cultures, and for his entire life has enjoyed getting to experience the strange folk that exist in their beautiful world. Naturally, from even a young age, Ludo has found his life pushing him in the direction of an investigative reporter. Even with the danger offered Ludo is wholly dedicated to uncovering the truth, as well as giving a voice to the people of Hylia.
In terms of his daily life, Ludo is an employee of the Hyrule Courier, distributed via the classic red-capped deliverymen. They are one of the bigger names in journalism, but naturally most folk will either love them or hate them depending on their opinion of the crown; specifically, Hyrule Courier runs pieces that are sponsored by the royal family in exchange for more exclusive access. Much the chagrin of his bosses--and some Hyrule officials--Ludo will often try to sneak in information that the people paying for the stories may not like to be included.
For now, Ludo awaits his "big break", some story that he feels really needs reporting. He isn't willing to stoop to cheap stories or fluff, often getting himself in danger to try to break the biggest news. He feels in his heart of hearts that something big is going to happen soon, he just needs to keep his eyes open for the opportunity to witness history's big turning points. Unfortunately, this desire is well-broadcasted and is liable to give his poor widowed mother a heart attack.

Name: Boto the Powerful

Race: Goron
Appearance: He stands as tall as most Gorons, and also share the common purple eyes they have. But unlike most Gorons, instead of having a round belly it is instead replaced with a flat muscle bound stomach. Another thing he does unlike most Gorons is wearing clothes, such as wearing the Climber shirt and pants along with a straw hat to finish it off. His facial is in the style of the Van Dyke beard with dark brown hair with a single dark brown bun of hair on top of his head.
Basic Information:
A famous Goron in the land of Hyrule, the reason being that he is the most physically strong Goron in this current generation, being able to take down opponents much bigger than himself and take down weaker opponents such as Bokoblins in a one or two hits. While he may seem like a powerful and boastful guy who likes speaking about his victories, behind the covers however is something deadly which has effected him. A few weeks ago, he had contracted a strange ‘disease’ that weakens his health but not his entire body, he still remains strong and powerful but at the cost of being at one heart. But due to his physical resistances, he can survive four physical attacks but he is vulnerable to magical attacks, it being powerful enough that it can take him out in one attack. He has been trying to find a cure to this ‘disease’ but nothing seems to be working, no matter the amount of fairies or healing food used, he will still not go above his single heart. But that won’t stop him from traveling the lands, seeing many things and today, he is planning on going to the coronation of the Princess of Hyrule who is gonna be queen. He also enjoys drinking lava juice and eating gemstones along with training to keep his physical body maintained.
