Depends on your character whether they acknowledge that they're chosen or not- for instance, you could have a vague idea that El-Shiggurath may be the creature whispering to you but not know that you were the one blessed by it, something like that. For the others with more obvious blessings though (i.e Zhan and his superhuman strength), they probably already know.

What if, say, a character grew up on the street and they had to learn at a young age how to be stealthy and agile. Would they attract a blessing from Coiam, for example, but not know it until later in life?

Certainly. Though, the Pantheon is very whimsical with how they imbue blessings- it could be for a variety of reasons, mostly to give you guys free reign over how your character got their blessing. There are characters like Zhan who were just imbued with it right at the beginning (possibly because they embody the god in many ways), and there are also characters like Rezarl who was given the blessing because it was in accordance to the god's own personal beliefs (Albion being the god of justice and all).

In particular, Coiam is the most whimsical and carefree of the Pantheon, so she could quite literally bless a character for any reason in the book.

I did have a question as to the world itself. Can I make up the name of a random city? And I noticed a couple people mentioned demons? Sorry if these are a lot of questions but I'm just trying to make sure I understand everything about the world we're rping in.

It's okay to make your own random cities, don't worry. Mythical creatures and the existence of El-Shiggurath kind of already cemented the idea that demons do exist here, though more in the sense of usual fantasy stories rather than the Biblical sort.
