If she is just an ordinary peasant girl, which she probably is since there aren't any completely hollow people in this setting and there never have been, I'd assume her reaction is going to be to completely panic and freak out over her sudden ability to turn into a monster, and try to hide it if she can. If she can't control it fully, the result would be her going on an accidental rampage and being hunted by locals who believe her to be a monster.

If I remember correctly, weren't other people transformed into Titans by eating her body or something like that? The only reason they did so in the original is because they wanted more of that power, since I think Ymir protected the Kingdom with it? I think?

They are ruled by a king whose name I haven't decided on yet, and I would estimate their population at over a hundred million counting colonies. Granted, Farmer Joe just plunged them into a famine, and they will be declaring war on every other power in the west to take their food in response, so that will likely change soon.
