What is the limit to how many characters we can make? (I usually like to handle 2 or 3, mostly 2 though)

I would say only one cat "In power" so to speak. So only one leader or medicine cat and another warrior or apprentice. Also, check which NPCs are family to other characters and ask if you would like to play them. Other then that, you should be fine.
