This one stood out to me: Andarun -- Crazy detailed set-up for the world, plus there's two RPs advertised for.
Here's another -- open world, has its own Wiki.
A third -- Aether -- has established backstory, classic fantasy races.
There were two others to be mentioned, but they're full-up. I can keep an eye open for any good ones that I come by.
