It is cold and it is hot
It is white and it is dark
It is stone and it is wax
But its true nature is meat
and its color is red.

I am the source of all emotion.
Yet I am caged behind bars.
What am I?

Interestingly enough, the answer to both is clearly the heart. Someone can be cold hearted, yet also warm hearted, someone can be good (white), someone can be evil (dark). A heart can melt (wax) or it can be of stone.
However, of course it is actually simply meat and thus is indeed red.

The heart is often said to be (wrongly) the source of all emotion and the ribcage which protects the heart is well... literally called a cage.
