So how exactly do summoners control the creatures they summon? Like making sure their summons dont go out and attack them?

To be honest, Summoners don't have much control over their summons. What summoners can do is summon and desummon their summons. It is mostly up to the summon how much control they have over them. It also depends on how a summoner treats their summons, some may treat them like an animal which could brainwash them into total submission or make them hate their summoner, while others like their own person and that could make them do whatever they want because they can or make the summons feel like they should obey their summoner. It all depends
