Personally, I wouldn't go too crazy with the races just because it's a lot of lore to keep track of. But go for it.

Insectoid race, and a mutant race based around the mixing of races genetically, such as, for example, a neko. These will probably be the rarest, making .5 of the galactic population, but I have a feeling some mad scientist would have a raging boner and be like... "I should totally make a fox lady!"
