You're going from humanoid to a sizeable animal, the time it takes for aetherium to "size" you up would take quite some time. 1 minute would be the estimation for shapeshifters to fully transform, yes. Unless you somehow stumble upon ancient knowledge somewhere along the way south, and manages to learn how to transform instantly.
(hypothetically speaking, of course)

Thurisaz takes time to prepare, yes. But once you do it, it's almost instantly and has a the capability of static deployments. Think of Thurisaz runes as firing a rifle in controlled bursts, where as "direct" methods of throwing fires from your hand is like that of leaving a water hose open and your body is the reservoir. While it seems like a chore to prepare each rune before or during battle, it actually leaves you less susceptible to corruption. Where as continuous flow of aetherium through your body will give you magic cancer so to speak.
