Food [Abandoned] Random recipes!

Heya, everyone! I'm a huge fan of cooking and baking, and I'll spend lots of time finding & trying out new recipes to try making for my family. So to discover some new and interesting recipes and maybe get some advice from you guys, I I wanted to share a few of my own, and ask you to share some of your favorites as well!

Rules but not really:
Tl;dr, just post the recipe you like in whichever way you feel most comfortable!
o Even the simplest of recipes are welcome! Hell, if you have a good pancake recipe, post it! There's a surprisingly large amount of ways to make pancakes and I'm always open to a new one!
o Everyone has their own style of writing down recipes. Try to keep it clear for everyone, but there's no need to be super-precise pr detailed with every step if that's not your thing.
o If you don't write your recipes down and simply use a certain site or food blog, feel free to post a link instead!
o Feel free to use whichever unit you feel most comfortable using! I might post some conversion tables later on.
o Recipes featuring country-specific items are, of course, welcome but do try to stick to universal items, that way can share recipes, anyone anywhere can give it a try!
o Dishes of any type are allowed! Whether vegan, gluten-free or otherwise.
o You're allowed to post pictures, but they're not a requirement.

Not gonna lie, whenever I cook, all my measurements are just guestimations for what I need. Just last night I made hearty slavic stroganoff, it is best meal for hungry gopniks. But seriously though, I didn't measure a single thing.
 
I know a lot of people like that! My mom for one. She makes a lot of delicious things but whenever I ask for a recipe she always tells me she does it "na oko", which is a Polish expression meaning she does it on feeling, or literally, by looking. I in the meantime tend to note down amounts with a lot of precision. On the other hand, I don't usually note down time and just put down rough estimates or vague descriptions like "when it's ready".

I'm curious, have you always done it like that? Or did you start feeling more comfortable relying on your senses after you gained more experience in the kitchen?
I'm 17 now and have been cooking for about 10 years. At first it was just me helping in the kitchen and learning as I helped. When I got older I started cooking by myself but followed recipes by the letter. But now as I've aged even more and cook all the time, I just do it by hand with how it feels, tastes, looks, and rough estimates for measurements. I've been freehand now for 3 years.

It's awesome we're pretty much the same age! I wish I was that confident in my cooking, but hey I started a bit later and sadly don't always get the time to cook. Practice makes perfect, so I'll just continue perfecting the skills I have till I'm able to say the same :)
Practice does indeed make perfect, I didn't always have success in what I decided to make. Hell, I still mess up new recipes sometimes but I have others I know by heart and make them with no troubles. And hey since we're the same age just about, that makes things all the more relatable.

Anyways, here's a recipe I adore. It's hella simple, but close to my heart. Making the dough the night before and then proofing them for the next morning to bake is usually what I do. I'd sit with one of my siblings or my old man outside by our fish pond and eat these with tea before they leave for school or work. It's really nice fresh and accompanied with coffee/hot chocolate/tea. I recommend you to proof them for a while as it can make the beignets lighter. Plus, it's a healthier alternative to the deep fried stuff :P So... Yeah!

My favorite easy dinner recipe is basically just cheesy chicken and rice casserole. I've made it so much I just wing it at this point but it's heavenly I swear

All you need is 2 chicken breasts, 1 cup of rice, a bag of cheddar cheese, some water, and a can of Campbell's Cream of _______ Soup.
I usually get cream of broccoli but they have mushroom, onion, chicken, celery, I think there's even a cheese one, but they all work!
  1. It's 1 can of soup to 1 can of water with 1 cup of rice (so if you really like rice or have more people than 2-3, 2 cans of soup, 2 cups of water, 2 cups of rice) and you whisk it all together in a baking dish. I have a 4 qt glass baking dish that I always use but I'm sure any would work, the rice always ends up sticking a little bit anyway
  2. Then you throw your full chicken breasts in (you can season them, I throw on a little salt and pepper at least), just right on top so it's partially uncovered by the rice/soup mix
  3. Next, you cover it with some tinfoil and throw it in the oven at 375 degrees for about 45 minutes
  4. When you have about 10 minutes left, take it out of the oven and throw some cheddar cheese on there! I love cheese and sometimes just throw an entire bag on but just eyeball it and go for however much you like, worst case throw more on there after
  5. With the cheese on, you leave it uncovered and put it back in for the remaining time
It's super easy, my roommates are those "could burn cereal" kind of people and this is something I can set up in the morning and have them put in the oven in the afternoon so when I get home I can do the cheese part and it's ready, not to mention it's such a comfort food!
 
Peanut Butter-Marshmallow Toast! All you need is bread, doesn’t matter what kind honestly just use what bread you love. And take two slices of bread and spread the top half of each slice with peanut butter. Then the bottom of the bread with Jet Puff (or mini marshmallows, if you want to skip the oven. Just be sure to use butter spray.) And bake for 3 to 5 minutes, depending on how high your oven temperatures are. And enjoy! I hope you guys like this recipe. :)
 
Fun quick easy and delicious!
Eggy Bread:

This is a favourite go to of mine passend on to me from my stepdad from the South Island. It’s great comfort food but beware. The centre can sometimes be superheated.

Take two slices of your favourite bread. Put one slice on a plate and press the middle down with a finger to make a depression in the bread. IMPORTANT lift the bread up and put it down again so the bottom isn’t stuck to the plate.

Take one egg. Crack it into the depression you just pressed into the bread.

Two thick slices of cheese should cover the egg, then place the second slice of bread on top to make a sandwich.

Put sandwich in the microwave on high for 1minute 20secs for runny yolk or I think it’s about 1 min 40 secs for set. Then enjoy your cheesey eggy delicious sandwich.
 
Ulvila Bread!

You'll need:
  • One loaf of French bread
  • Classic mustard
  • Unsalted butter
  • White onion
  • Bacon
  • Poppy seeds
  • Sliced swiss cheese
Preheat oven to 400.
Dice onion.
Soften butter in microwave.
Mix butter/poppy seeds/onion/mustard.
Make a foil 'boat' around the French bread.
Cut bread into slices BUT do not cut all the way down!
Fill slices with mustard filling and bacon and swiss cheese.
Got leftover filling and bacon and cheese? Top it! Or grab another loaf and repeat!

Bake til bacon is crispy and bread a bit firm. About 45 mins at most.

Let Cool and then enjoy! I usually eat this with salad to feel less guilty lmao.

Do not refrigerate the bread. Store in tubbaware or zip lock.

HAHA my mother is Filipina and white and she doesn't measure either! I'm becoming like that as well I notice.xD
Unless I'm baking then I make sure to be precise. But if its cooking I tend to wing it. Never used the same amount of seasonings twice, I tell you that!
