Well, is this going to be a romance one? if so, maybe make it that the bartneder is in his mid - late 30's? he is an experienced merc but retied to become a bartender, is soft spoken but can be rough spoken if the situation calls for it?

The story isn't a romance. Its just so that the bartender appears as a non threat to the patron. That's how I normally do this scenario. You'll know where this is going soon enough
