I am interested in this RP, and am hoping there's still spots to join, but the idea of humans being the bestest has been explored HEAVILY in multiple places.
Star Wars, for example. Or, Warhammer 40,000. They're so good, the writers gave them infighting in order to not crush every other race.

Not really. The dynamic is always either humans join some galactic council and discover they aren't the hotshots any more, or they're humans but in space and the idea doesn't go farther than that. This supposedly takes the first idea, and puts humans back on the center again: they join the galactic council and discover they still are the hotshots. And shenanigans ensue because they're also emotional wrecks. And stuff.

Add into the mix that they might find out at some point that they've existed way back and have been exterminated mostly (and heavily by a certain race) and things will get reaaaaaaaaaaaaaaaaally interesting

Thing is, Star Wars doesn't really focus much on humans as its more about the other races, Galactic nations, and politics.
40k is more about humans in a galaxy that is literally set out against them, where they have some equally tough enemies. So while they are good, they have some contenders to give them a run for their money.
In my world, Humans are absolutely the most feared race to have existed. They were at one point on a war path, conquering the galaxy until everyone had to unite to beat them. And with their return, the whole galaxy is fucking pissing themselves in fear. That's what distinguishes my universe away from others, everyone fears humans and they are absolutely one of the most powerful races in the galaxy.
