Is there a list of languages used in all the exalted settings available in any of the books?  I found some in one book and others in another.  Just wondered if there is a list of all the languages printed somewhere.

You are also forgettening about Autochtonian and the Tribal Languages.
True, though Autochthonian is more or less a dialect of Old Realm, and the "tribal" languages have never been enumerated in such a way that one could answer the question, "how many are there?"

Is there a language that corresponds to the Elemental Pole of Earth, like Sea/Sky/Flame/Forest-tongue? I always thought that it got subsumed under the Realm languages.


 Or are you referring to Rocktongue, as spoken by the Mountain Folk?


 I seem to recall languages specific to the Underworld and Malfeas as well...

I wasn't actually. That was a mistake on my part. However, if there is a Rocktongue, then there you go :)

Another thing to keep in mind is that Flametongue, Skytongue, et al. are not languages as such, but language families with a great deal of mutual comprehensibility. This allows people from different places to still speak different languages, even if they're from the same general polar direction. They're going to understand each other most of the time, but the way I tend to call things, if someone from the other side of your Threshold direction is speaking very rapidly with someone from their hometown, you're gonna have problems following them. The situation is roughly comparable to speakers of Scandinavian languages - Danes can understand Swedes most of the time and vice versa (as loath as they are to admit it sometimes), but if you get two old friends from Stockholm together, someone from Aalborg is going to be lost.


Of course, this might just be my own professional interests influencing me, but darn it, if I can model something better than the provided systems can, I'm going to go ahead and model it.

Someone told me there was something called Heliocode(?)
 
All of the "something our ST is running" are non-canonical.


High Holy Speech is the tongue of the Dragon Kings, whereas Old Realm is the language of, well, the Old Realm.

Heliocode is a Lookshy military code thing used with heliographs. The idea is that it's a more reliable long-distance communication system that doesn't take Essence every time you want to send a message and isn't open to quite the same abuse Wind-Carried Words is (one of the PCs in my on-going DB campaign got tricked by someone using said Charm pretending to be a higher-up he didn't know personally; if a voice whispers in your ear claiming to be someone with a pretty urgent order, are you going to hop to or go through the lengthy process of checking up on it?)
 
Spirits speak Old Realm.


 As for the compromisability of Wind-Carried Words, if Lookshy isn't using regularly changing codes (and the occasional one-time pad) when using the charm, well, they should be.
