I generally use younger characters because of the inherent innocence and with older characters it generally feels like the process of development seems rushed and usually they either revert back to their old selves or change so drastically that they seem so misplaced in the original story. That, and with younger characters the emotions feel more raw and wholesome. Change is often meet with unrealistic resistance and stains their perception even further. Plus romance, in most cases, is goofy and more times than not isn't part of their development.
Although when I have to, my older characters are more "old soul", offering wisdom beyond their years even if they are middle aged. Exchanging the pleasures of youth for worldly experience as to help whomever they're near develop further. I guess, in short, I love side characters who don't always stand on center stage but may just offer the guiding words that save a main character from making a bad choice, or even a good one (no one said wisdom is reserved for the heroes alone).
