Gaara vs Taph

Sand is earth.


That's the absolute core of why Toph would win.


To detail; Gaara can't manipulate rock. He must first pulverize it into sand. Toph,meanwhile,can manipulate earth in all of its forms; Sand,mud,rock,geode crystals,even low-quality metal. And while she's blind,as an Earthbender,she can intuit the presence of earth like a normal human can intuit up from down; With Gaara's habit of carrying around an enormous jar of sand,that's better than any homing beacon,and with Toph having invented the art of Truthseeing,she will know exactly where Gaara is at all times,and what he's up to,effectively turning her blindness into an advantage. Toph,being a practiced martial artist and regular participant of an underground fight club,she's no stranger to injury and pain; Something that Gaara apparently didn't know until much later in life.


It also helps that Earthbending,especially the unique discipline that Toph practices,happens to be one of the most brutal branches of kung fu; She can seamlessly switch from chucking boulders to snapping your arm like dry tinder with her own bare hands.


Gaara,meanwhile,is literally entirely reliant on everything Toph can manipulate. I realize Gaara's mother haunts his sand,but no matter how much magic or spirit energy you sink into the sand,without changing its state to glass (which an Earthbender could still theoretically bend),it's still sand,and therefore a valid target for Toph's Earthbending. While yes,Toph initially could barely Sandbend,by the end of the show,she's good enough to make an incredibly detailed miniature Ba Sing Se with a single motion out of sand. Furthermore,Toph can deny Gaara access to sand by compressing it to stone,and if Gaara tries to use his weapons,which are made of iron or steel,which Metalbenders are shown to be able to muck with effortlessly,Toph can deflect them.


In the end,it's a hopeless scenario. It's like pitting Vlad the Impaler against infants.
