Can you save more than one draft of a conversation? Or can you only do one conversation draft at a time?

You can only have one draft of a particular post at a time. So if it's a new conversation, you can only have one; but if it's a reply to a conversation, the system sees that as a separate post and will save its draft separately.
Note that the draft system is not infallible so if you've got a long post you're working on and it's going to be more than a few minutes before you post it, I highly recommend saving it in your private workshop, Google docs, or some other place as a backup.
